Banana Muffins with Cinnamon Streusel

I actually hate bananas.  I guess hate is a strong word, but I dislike them a lot.  If you've ever seen me try to eat a banana, you will see a very disgusted face if it's a plain banana.  A semi-disgusted face if I can smear peanut butter all over it.  peanut butter makes everything better.  Now that I'm thinking about it, I guess I should have made peanut butter banana muffins.  I guess that will be next on my to do list when I have overly ripened bananas.

Banana Muffins with Cinnamon Streusel

Ingredients
For the batter:
- 1-1/2 C. flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp. salt
- 4 small ripened bananas (or 3 large ripened bananas)
- 3/4 C. white sugar
- 1 egg
- 1/3 C. vegetable oil
- 3/4 tsp. vanilla extract
- 1 C. walnuts (optional)

For the topping:
- 2/3 C. brown sugar
- 4 TBSP flour
- 1/4 tsp. Ground cinnamon
- 2 TBSP Butter


Yields
~ 16-18 muffins (or 12 giant ones like I did, oops!)

Instructions
1. Preheat oven to 375 degrees F (or 190 degrees C)
2. Line a muffin pan with 12 muffin tins and another with 6 (or grease muffin pan)
3. In a large bowl, mix together flour, baking soda, baking powder, and salt 
4. In another large bowl, mix together banana, white sugar, egg, vegetable oil and vanilla (and optional nuts)
5. Mix the banana mixture into flour mixture
6. Spoon batter into muffin cups (tin should be 2/3 full)
7. In a small bowl, mix together the brown sugar, flour and ground cinnamon for the topping.  Cut in the butter. Sprinkle and press lightly over the tops of the muffins.
8. Bake 15-20 minutes or until toothpick comes out clean.

  2. I can't eat bananas, either! But I can eat them in baked goods and small amounts in smoothies... weird, right?
